Matt invented a new cocktail in honor of La Perdida. It’s delicious (and deceptively “quaffable”…might as well be called La Noche Perdida (the Lost Night).

1 oz. silver tequila
1/2 oz. fresh lime juice
1 teaspoon simple syrup
champagne

Shake tequila, lime juice and simple syrup with ice and strain into a
champagne flute. top with chilled champagne.

Tip: don’t fail to shake with ice. There’s a crucial amount of watering-down that happens in that stage that we skipped at the party where we made them by the pitcher.
